Cheat Day Queso Recipe

So, I've mentioned before that Sunday's are cheat day in the Barnett household. My husband in particular sticks to a VERY strict paleo diet during the week (if you're interested, he posts all his meals on his instagram @dbarnett29 if you want to follow along!) but on Sunday's he is off work, and we get to hang out all day and eat horrible/awful food. Yesterday we made his phenomenal Queso, so I decided it was so good the world needed to hear about it.

****DISCLAIMER***** Freaking NOTHING about this is crunchy/healthy/organic/goodforyou/natural. I try to keep to a certain theme here on the blog, but, I think it's important I don't make myself out to be some holy crunchy goddess that only eats local organic food. As much as I would love to be that way in real life, the queso recipe below should allow you to rest assured I'm not :)

So, first things first! Buy ingredients. I had to make a special trip to United to get these ingredients. Shockingly, they don't sell velveeta 'cheese' at Sprouts. I KNOW RIGHT?

PS- It took me about 15 minutes to find the Velveeta. (Hint: It doesnt need to be refrigerated 0__o)

Here's the spread, yall. Except the bacon. David took this photo for me, and obviously he wanted to sneak in his beloved bacon.

-Block? Loaf? Whatever It's called, of Velveeta Cheese
- Jimmy Dean "All Natural" Sausage (*snort*)
- Small can of HATCH green chilis (diced)
- Half a big can or a whole smaller can of diced tomatoes
-Chips to your hearts content!

Next is to brown your sausage. For this recipe I just used half of the package, but if you're wanting to make a lot (like, a party-worth) you would use the whole thing.

Then you will add in your tomatoes, chilis, let it get a good little sear and then add your 'cheese' and let it all melt into a glorious beautiful fatty goodness.

YALL. Food porn. It's so dang good.

Then, add some chips and eat until you either hate yourself or you fall asleep mid-sentence.

See that nice orange-ish color? That's how you know its niiiiiice and processed.

I LOVE this queso. Next time you have a 'cheat' day and you want to fill up on some pretty amazingly bad for you stuff. I got you.
